چکیده

Currently, feedlot producers tend to overfeed pens of cattle to ensure adequate marbling, which results in poorer feed efficiencies and higher cost of gains. However, time on feed and corn-based diets work in concert to increase the oleic acid (18:1n-9) in marbling (intramuscular, i.m.) and subcutaneous (s.c.) adipose tissues (Chung et al., 2006; Smith et al., 2009). Corn-based diets stimulate stearoyl-Coa desaturase (SCD) gene expression (Chung et al., 2007) and the resultant oleic acid improves beef palatability (Waldman et al., 1968; Westerling and Hedrick, 1979) and increases its healthfulness of beef (Adams et al., 2010; Gilmore et al., 2011).

Sequencing and Characterization of Divergent Marbling Levels in the Beef Cattle (Longissimus dorsi Muscle) Transcriptome

Marbling is an important trait regarding the quality of beef. Analysis of beef cattle transcriptome and its expression profile data are essential to extend the genetic information resources and would support further studies on beef cattle. RNA sequencing was performed in beef cattle using the Illumina High-Seq2000 platform. Approximately 251.58 million clean reads were generated from a high mar...

Allele Frequency Distribution in PNLIP Promoter SNP Is Different between High-Marbled and Low-Marbled Japanese Black Beef Cattle

Marbling defined by the amount and distribution of intramuscular fat is regarded as an economically important trait of beef cattle in Japan. The pancreatic lipase gene (PNLIP) is located within the genomic region of a bovine marbling quantitative trait locus. The rat homologue of PNLIP has been previously shown to be regarded as a possible candidate for the gene responsible for intramuscular fa...

Growth- and breed-related changes of marbling characteristics in cattle.

The objective of this study was to investigate the growth- and breed-related changes of marbling characteristics in cattle. Four cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus, as a typical beef cattle; Galloway, as a smaller, environmentally resistant beef cattle; Holstein-Friesian, as a dairy-type cattle; and...

Marbling and Its Nutritional Impact on Risk Factors for Cardiovascular Disease

This review addresses the role of fat in beef palatability and healthfulness. Particular emphasis is placed on the content of oleic acid in beef, and how this increases with time when cattle are fed a grain-based diet. Oleic acid decreases the melting point of lipids from beef, increasing the perception of juiciness and improving beef flavor. Clinical trials have demonstrated that ground beef c...

Assessing the association of single nucleotide polymorphisms at the thyroglobulin gene with carcass traits in beef cattle.

The objective of this study was to assess the association of SNP in the thyroglobulin gene, including a previously reported marker in current industry use, with marbling score in beef cattle. Three populations, designated GPE6, GPE7, and GPE8, were studied. The GPE6 population sampled breeds that could be used as alternative germplasm sources in beef cattle production, including Wagyu, Swedish ...
